Cranberry Gelatin Salad

Ingredients
  • 1 (6 oz) cherry gelatin, or other red berry flavor
  • 2 cups hot water
  • 1 (14 oz) whole berry cranberry sauce, mashed
  • 1 (15 oz) can mandarin oranges, drained
  • 1 (20 oz) can crushed pineapple, drained
Instructions
  1. Mix the gelatin with the hot water and stir until dissolved.
  2. Add the mashed cranberry sauce. Drain the oranges and crushed pineapple and add them to the gelatin, stir until combined.
  3. Pour into a 9" x 13" pan and refrigerate until firm, approximately 3 - 4 hours.
Notes
The cook time is actually the time required for chilling.

Optional: Add 1 cup chopped walnuts to the mixture before chilling.

This side dish can also be topped with a non-dairy topping or fresh whipped cream.
