Blender Pancakes or Waffles  Ingredients  1Cup whole wheat kernels  1Cup warm water  1/2 can coconut milk 1tsp of Salt  2 whole eggs 1 Tbsp Baking Powder  Instructions- Put 1 cup of whole wheat kernels and 1cups of warm water, 1/2 can coconut milk, 1 tsp of salt in the blender . Blend until wheat is ground and mixture is thick. (Note: the longer it blends, the thicker it gets, so be sure to watch it, or it might get too thick.) 2. While keeping the blender going Add 2 whole eggs Blend until well mixed.  3. Keeping the blender at full speed Add 1 Tbsp baking powder, and let blend for 10 seconds.   Enjoy!!

Cheesy Chicken Enchilada Soup INGREDIENTS 2 tablespoons olive oil 1 large purple onion, diced 1 red bell pepper, diced 4 cups chicken broth 2 teaspoons cumin 10 ounces red enchilada sauce 1 – 14.5 ounce can fire roasted diced tomatoes 1 can black beans rinsed and drained 1 – 4 ounce can diced green chiles 8 ounces cream cheese, cut into 1 inch cubes 1 cup Horizon Organic Shredded Mexican Cheese, additional for garnish 2 cups shredded cooked chicken (I used a rotisserie chicken) 3 Tablespoons chopped cilantro, reserve some for garnish Salt and pepper to taste 3 green onions, chopped, reserve some for garnish GARNISH INGREDIENTS Chopped green onion Chopped cilantro Diced red onion Crushed Tortilla chips Diced avocado Horizon Organic Shredded Mexican or Cheddar Cheese Plain Greek yogurt or sour cream DIRECTIONS Heat 2 tablespoons olive oil in a large soup pot/dutch oven over medium high heat. Cranberry Gelatin Salad Author:  Heather Carter - MySweetMission.net Recipe type:  Side Dish Cuisine:  American Serves:  12 Ingredients 1 (6 oz) cherry gelatin, or other red berry flavor 2 cups hot water 1 (14 oz) whole berry cranberry sauce, mashed 1 (15 oz) can mandarin oranges, drained 1 (20 oz) can crushed pineapple, drained Instructions Mix the gelatin with the hot water and stir until dissolved. Add the mashed cranberry sauce. Drain the oranges and crushed pineapple and add them to the gelatin, stir until combined. Pour into a 9" x 13" pan and refrigerate until firm, approximately 3 - 4 hours. Notes The cook time is actually the time required for chilling. Optional: Add 1 cup chopped walnuts to the mixture before chilling. This side dish can also be topped with a non-dairy topping or fresh whipped cream.

PRESSURE COOKER CHICKEN TORTILLA SOUP Author:  KITSCHEN CAT Prep time:   10 mins Cook time:   10 mins Total time:   20 mins Serves:  8   INGREDIENTS 2 Large Chicken Breasts 12 oz your favorite salsa 6 Cups Chicken Broth 1 onion, chopped 1 red bell pepper, diced 2 teaspoons cumin 1 tablespoon chili powder 2 teaspoons salt ½ teaspoon black pepper ⅛ teaspoon cayenne pepper 4 ounces tomato paste 1 15oz can black beans, drained and rinsed 2 cups frozen corn Toppings limes, sour cream or greek yogurt, cilantro, green onion, avocado, tortilla chips INSTRUCTIONS In pressure cooking pot, add chicken, salsa, chicken broth, onion, bell pepper, cumin, chili powder, salt, black pepper, cayenne pepper, and tomato paste.
